Maine Sea Scallops with Pasta, Tomato and Spinach
2/3 c. Extra virgin olive oil
3 Clove garlic-minced
1/2 c. Fresh basil-roughly chopped
1 Large tomato-chopped
1 5oz. bag Baby Spinach
1 16oz Angel hair pasta
Cook the pasta, rinse then set aside.
Place scallops on a baking sheet lined with a paper towel. Then with another paper towel, pat the outside of the scallops dry. This is an important step (do not skip)
In a large skillet, heat oil over low-med heat. Add garlic and cook for about 1 minute. Stir in scallops, cook for about 1 minute.
Finally, stir basil, tomato, and spinach. Cover and cook for 5 minutes, stirring occasionally until the scallops are cooked through. Add to pasta, serve, and enjoy!
