Puffed Baked Haddock Filets

Okay, we know that haddock filets are downright delicious on their own. However, this recipe takes haddock to another level. The whipped egg whites turn a rich and cheesy sauce into a soufflé-like baked crust that perfectly complements the flakiness of haddock fillets.

Ingredients

  • 1 ½ lbs Fresh haddock
  • ½ Cup Mayonnaise
  • ½ Cup Shredded Cheddar Cheese
  • 2 Egg whites (well beaten)

Preheat oven to 450 degrees. Rinse fillets under cold water; pat dry with paper towels. With an electric mixer, beat egg white until stiff and then fold into other ingredients; set aside. 

Arrange haddock filets in a buttered baking dish. Cover haddock generously with the combined mayo, cheese & egg whites.  Bake fish 10 - 12 minutes per inch of thickness, or until sauce is browned and fish flakes easily.

Serve with fresh vegetables and enjoy!
